- 900g/ 2lb frozen corn (2 bags)
- 2 tbsp avocado oil
- 1 garlic clove
- 1/4 cup red onion
- 2 tbsp cilantro
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp paprika
- 3 tbsp whole milk plain Greek yogurt
- 6 tbsp feta
- 1 lime
- Dash of cayenne (optional)
Instructions
- Add the avocado oil and frozen corn to a large frying pan. Cook over medium heat for 5-10 minutes. Transfer to a large mixing bow and allow to cool.
- Mince the garlic and finely chop the onion and cilantro.
- Add the garlic, onion, cilantro, cumin, salt, paprika, and Greek yogurt to the mixing bowl.
- Juice the lime and crumble the feta over the mixing bowl. Gently stir until combined. Serve cold.
